I quite often start the week with baking a load of potatoes ready for quick lunches and for making the most amazing mash potato. This isn’t much of a recipe but I feel that it’s really worth sharing, it’s one of those dishes that will elevate any meal when you have mash. The sweetness of a baked potato is hard to beat.
I am unapologetic about the butter.
4 large Maris Piper or King Edward potatoes
enough table salt to cover the bottom of a baking tray
100g butter, cubes
grind fresh white pepper
Pre heat the oven to 220C fan. On a tray that will fill the potatoes snuggly, cover the base with a sprinkle of fine salt.
Bake in the oven for 45 minutes. Check they are soft through when pierced with a knife. Remove from the oven, cut in half and allow to cool for a few minutes. Peel the skins or scoop the potato into a bowl. Add the butter and mash. Check seasoning. I like white pepper in mash.
