Miso is an umami flavour bomb. Here I give a recipe for a miso sauce which can be stored in the fridge for up to 2 months to use as a marinade for vegetables, fish, poultry or meat. This will make 300ml of sauce. I usually use 1 tbsp of sauce per person when marinating.
Put all the ingredients in saucepan. Bring to the boil while whisking together. Lover the heat and let simmer for 15 – 20 minutes until slightly thickened and reduced by half.
Leave to cool completely then store in an airtight container in the fridge until needed.

- 125 ml sake or dry sherry
