Miso is an umami flavour bomb. Here I give a recipe for a miso sauce which can be stored in the fridge for up to 2 months to use as a marinade for vegetables, fish, poultry or meat. This will make 300ml of sauce. I usually use 1 tbsp of sauce per person when marinating.

Ingredients
300gred miso
30gcaster sugar
250mlmirin
125mlsake or dry sherry
Instructions
Put all the ingredients in saucepan. Bring to the boil while whisking together. Lover the heat and let simmer for 15 - 20 minutes until slightly thickened and reduced by half.
Leave to cool completely then store in an airtight container in the fridge until needed.
