An unusual but tasty refreshing salad which works well with many Asian dishes. We’ve enjoyed it with chicken satay, pulled pork and just as a salad.
800g watermelon, thinly sliced and cut into 2cm pieces
1 tsp sesame oil
1 clove garlic, crushed
1 tbsp caster sugar
1 lime, zested and juiced
1 tbsp coriander, chopped
4 spring onions, finely sliced
1 tsp toasted sesame seeds
In a serving bowl that will fit the watermelon, mix sesame oil, garlic, sugar, lime juice and zest and season with salt and pepper.
Add the watermelon, coriander and spring onions and give everything a good stir is the dressing. Leave for 5 minutes before serving then scatter with sesame seeds
