
Whip this up in just 10 minutes. Great accompaniment for chilli or with eggs and avocado on toast. I adore sherry vinegar and it’s worth adding it to your condiment cupboard, however, white wine vinegar will be fine.
200 g ripe tomatoes
1/2 red onion, very finely diced
2 spring onions, thinly sliced (including green parts)
1/2 small bunch coriander, leaves removed and roughly chopped
1/2 lime, juiced
drizzle of sherry vinegar (or white wine vinegar)

Finely chop tomatoes. Lift off the chopping board with your fingers to a bowl, leaving the excess moisture on the board. Add the red onion and spring onions and coriander, season generously with salt and mix well. Stir in the lime juice and a dash of vinegar, stir again and serve.
