Ingredients
200gripe tomatoes
1/2red onionvery finely diced
2spring onionthinly sliced (including green parts)
1/2smallbunch corianderleaves removed from stalk and roughly chopped
1/2limejuices
drizzlesherry vinegar (or white wine vinegar)
Instructions
Finely chop tomatoes. Lift off the chopping board with your fingers to a bowl, leaving the excess moisture on the board. Add the red onion and spring onions and coriander, season generously with salt and mix well. Stir in the lime juice and a dash of vinegar, stir again and serve.
