A quick aioli which isn’t too overpowering. Perfect to use as a dip for crudités or served on the side of a paella and fish dishes.
5 cloves garlic, minced
1 tbsp lemon juice
100 g mayonnaise (homemade or shop bought)
1/4 tsp dijon mustard
Place the minced garlic in a small bowl and pour over lemon juice, add a large pinch of salt and leave to soak (macerate) for 10 minutes. Press through a fine sieve and add the garlic flavoured lemon juice to the mayonnaise.
