
Quick salsa which will accompany many asian dishes and adds a crunchy zing
1 tbsp fish sauce
2 tbsp palm sugar or soft light brown sugar
1 lime, juiced
1/2 cucumber, halved lengthways and sliced
1 banana shallot, finely diced
1 red chilli, seeds removed and finely sliced
2 tbsp coriander leaves, chopped
Place all the ingredients in a bowl. Stir well to dissolve the sugar and stand for 10 minutes before serving
Ideal with:
Vietnamese cucumber salsa
Perfect to serve alongside asian curry dishes
Ingredients
- 1 tbsp fish sauce
- 2 tbsp palm of soft light brown sugar
- 1 lime juiced
- 1/2 large cucumber halved and sliced
- 1 banana shallot finely diced
- 1 red chilli seeds removed, and thinly sliced
- 2 tbsp coriander leaves chopped
Instructions
- Place all the ingredients in bowl. Give a good stir to dissolve the sugar and leave to stand for 10 minutes before serving
