Vietnamese cucumber salsa

Quick salsa which will accompany many asian dishes and adds a crunchy zing

1 tbsp fish sauce

2 tbsp palm sugar or soft light brown sugar

1 lime, juiced

1/2 cucumber, halved lengthways and sliced

1 banana shallot, finely diced

1 red chilli, seeds removed and finely sliced

2 tbsp coriander leaves, chopped

Place all the ingredients in a bowl. Stir well to dissolve the sugar and stand for 10 minutes before serving

Ingredients
  

  • 1 tbsp fish sauce
  • 2 tbsp palm of soft light brown sugar
  • 1 lime juiced
  • 1/2 large cucumber halved and sliced
  • 1 banana shallot finely diced
  • 1 red chilli seeds removed, and thinly sliced
  • 2 tbsp coriander leaves chopped

Instructions
 

  • Place all the ingredients in bowl. Give a good stir to dissolve the sugar and leave to stand for 10 minutes before serving
