100g butter, softened
2 tbsp white miso paste
1/2 tbsp soft light brown sugar
1 red chilli, finely diced
4 corn on the cob
Mix the miso, sugar and chilli into the softened butter and set aside.
Cook the sweetcorn in a large pan of salted boiling water for 3 minutes then drain.
Cook the corn on the BBQ or under the grill for 10 minutes, turning every few minutes. Put the cobs on a serving dish and brush all over with the miso glaze.
Serve as a side with your favourite BBQ dishes or simply finish under the grill. Absolutely delicious umami hit from the miso and the sugar enhances the sweetness of the corn.
