
Important to use cooking chorizo, works well as a tapas dish or canapé. Alternatively try the cider cooked chorizo recipe.
You’ll need a shallow pan or small frying pan which has a lid.
Serves 4 as a tapas style dish or 8 to accompany drinks
1 clove of garlic, chopped
splash of olive oil
4 cooking chorizo sausages, cut into 1cm slices
3 tbsp red wine
1 tbsp honey
Chopped Parsley to garnish
Gently heat a splash of oil in the pan. Keep your pan on a low heat and add the garlic. Let it cook gently for 2-3 minutes but be careful not to let it burn. Add the chorizo turning after a couple of minutes to brown on both sides.
Turn the heat up and add the red wine, be careful because it may spit and sizzle. Add the honey, reduce the heat and put a lid on and let it cook for 10 mins.
Remove the chorizo with a slotted spoon and then pour as much of the fatty juices as you want depending on how naughty you feel. Sprinkle some freshly chopped flat leaf parsley
