Chorizo

Definition:

A richly seasoned pork sausage originating from Spain and widely enjoyed in Spanish and Mexican cuisine. It is typically flavoured with smoked paprika, garlic, and spices, giving it a bold, smoky, and slightly spicy taste. Spanish chorizo is usually cured and ready to eat, while Mexican chorizo is fresh and cooked before serving. Chorizo adds depth and warmth to dishes such as stews, rice, eggs, and tapas.
