Anything with a melted cheese crust gets my vote. Make in individual dishes or one to share.
Cook the pasta, drain and drizzle with olive oil.
Preheat the oven to 180C. Add a splash of oil to a pan and sauté the onions for 5 minutes, add pepper and continue to cook for a further 5 minutes. If necessary add another spalsh of oil, turn the heat up and add the mushrooms. Cook until soft and colour. Add the vegetables to the drained pasta along with sauce from a jar (or homemade), toss to make sure everything is coated and tip into an oven proof dish or roasting tin.
Add dollops of ricotta, followed by mozzarella and finishing with parmesan. Bake for 20 minutes or until brown and bubbling. I like mine piled with rocket on the top.

- 1 green pepper diced
- 200 g mushrooms roughly chopped
- 1 jar your favourite spaghetti sauce (or homemade)
- 100 g ricotta
- 100 g grated mozzarella
- 100 g parmesan grated
