I love self assembly family meals. Plonk everything on the table and let your friends and family build their own fajita.
2 large chicken breasts, finely sliced
1 red onion, finely sliced
1 red pepper, finely sliced
1 green pepper, finely sliced
1 red chilli, finely sliced
Marinade
1 tbsp paprika
1 tbsp ground coriander
1 tsp ground cumin
2 cloves garlic, crushed
4 tbsp olive oil
6 drops Tabasco
1 lime, juiced
To serve
8 small tortilla
70g cheddar or cheese of your choice, grated
tub of shop bought tomato salsa

Wrap the tortillas in foil and put in a warm oven until read to serve.
Mix all the marinade ingredients in a large bowl and add all the chicken and prepared vegetables including the chilli.
Heat a large griddle or frying pan until smoking hot and add the chickien and vegetables with the marinade to the pan. Give everything a good stir and fry on a high heat for 5 minutes or until the vegetables have softened and has slight charring on the edges.
Serve with the tortilla, cheese, tomato salsa and salad and everyone can fill their own.

- 1 lime juiced

- 70 g cheddar cheese or cheese of your choice grated
