This recipe is more a bringing together of other recipes found here on my site but it was such a success when I made it for the family I had to share it! I made mine as a main course but this would work really well in little gem lettuce leaves as party food to be eaten with your hands. The beef can also be bulked up with blanched sliced green beans added at the end. Be creative!

Soak the lettuce leaves in iced water. This makes them super crisp.
Make the Thai beef and rice. To assemble, divide the rice between the 4 lettuce leaves, top with beef, drizzle the sauce, sprinkle with spring onions, chilli and finish with the peanuts.

Ingredients
- 1 batch Thai Style Beef Mince with Sauce This will take 30 minutes
- 1 Batch Coconut Rice this will take 20 minutes
- 4 large iceberg lettuce leaves
- 2 spring onion thinly sliced
- 1/4 cucumber cut into fat matchsticks
- 1 red chilli thinly sliced
- 100 g salted peanuts roughly chopped
