This recipe is more a bringing together of other recipes found here on my site but it was such a success when I made it for the family I had to share it! I made mine as a main course but this would work really well in little gem lettuce leaves as party food to be eaten with your hands. The beef can also be bulked up with blanched sliced green beans added at the end. Be creative!

Ingredients
1batchThai Style Beef Mince with SauceThis will take 30 minutes
1BatchCoconut Ricethis will take 20 minutes
4 largeiceberg lettuce leaves
2spring onionthinly sliced
1/4cucumbercut into fat matchsticks
1red chillithinly sliced
100gsalted peanutsroughly chopped
Instructions
Soak the lettuce leaves in iced water. This makes them super crisp.Make the Thai beef and rice. To assemble, divide the rice between the 4 lettuce leaves, top with beef, drizzle the sauce, sprinkle with spring onions, cucumber, chilli and finish with the peanuts.
