Thai style beef mince

Created this recipe to form part of a “stack” dish I made for the family one night. They loved it! Try making the stack recipe or have it with noodles or rice

500 g minced beef

3 banana shallots, thinly sliced

4 cloves garlic, minced

2 bird eye chilli, finely chopped

1 tbsp ginger, grated

2 tbsp light soy sauce

2 tbsp dark soy sauce

2 tbsp oyster sauce

1 tbsp fish sauce

1.5 tbsp sugar

3 tbsp water

1 small bunch basil, leaves torn

4 spring onions, finely sliced

Sauce

4 tbsp light soy sauce

5 tbsp kecap manis (sweet soy sauce)

1 tbsp grated ginger

1 tsp sesame oil

Add a splash of vegetable oil to large frying pan or wok. Add the beef and brown all over. Remove with a slotted spoon to a bowl.

Lower the heat, add another splash of oil if the pan is dry, add the shallots of sauté for 5 minutes until soft. Add garlic, ginger and chilli and cook for a few more minutes. Return the beef to the pan along with any resting juices.

Add the light and dark soy sauce, oyster sauce, fish sauce, sugar and water. Give everything a good stir. leave to bubble on a medium heat, stirring regularly for 5-10 minutes.

While the meat is cooking, put all the sauce ingredients in a small pan, bring to a simmer then set aside to serve with the beef.

Once the beef is cooked, stir in the basil leaves and spring onions. Serve the sauce on the side and serve with rice
