
I’m always trying to find new ways with beef mince because it’s inexpensive, versatile and perfect for a midweek fix. Here I’m using Thai flavours and keeping it simple by using sweet chilli sauce which is available in all supermarkets.
The ingredients that I have added at the end are all there to add to the Thai flavour but don’t worry if you don’t have them available, it still tastes amazing
200g rice noodles
3 tbsp vegetable oil
500g beef mince
3 cloves garlic, finely chopped
3 bird eye chilli, finely sliced
1 shallot or 1/2 an onion, finely diced
120ml sweet chilli sauce
2 tbsp soy sauce
1 tbsp fish sauce
To finish
handful Thai bail, leaves torn
2 sprigs mint, leaves chopped
1/2 lime, juiced
sesame oil to drizzle
Cook the noodles to pack instructions, drain and set aside.
Heat the oil in a wok or large frying pan until it starts to shimmer, add the beef and shallot (or onion) and stir fry for a couple of minutes until coloured. Add the chilli and garlic and stir fry for another couple of minutes making sure the garlic doesn’t burn.
Pour in the sweet chilli sauce and 50ml of water and cook for another couple of minutes. Add the noodles and give it all a good stir making sure everything gets coated.
Remove from the heat, drizzle with lime juice, sesame oil and sprinkle the herbs.
