I'm always trying to find new ways with beef mince because it's inexpensive, versatile and perfect for a midweek fix. Here I'm using Thai flavours and keeping it simple by using sweet chilli sauce. The ingredients that I have added at the end are all there to add to the Thai flavour but don't worry if you don't have them available, it still tastes amazing.

Ingredients
200grice noodles
3tbspvegetable oil
500gbeef mince
3clovesgarlicfinely chopped
3bird eye chillifinely sliced
1shallot or half an onionfinely chopped
120mlsweet chilli sauce
2tbspsoy sauce
1tbspfish sauce
To finish
handfulThai basil leaves torn
2sprigsmintchopped
1lime
sesame oil for drizzling
Instructions
Cook the noodles to pack instructions, drain and set aside.
Heat the oil in a wok or large frying pan until it starts to shimmer, add the beef and shallot (or onion) and stir fry for a couple of minutes until coloured. Add the chilli and garlic and stir fry for another couple of minutes making sure the garlic doesn't burn.
Pour in the sweet chilli sauce and 50ml of water and cook for another couple of minutes. Add the noodles and give it all a good stir making sure everything gets coated.
Remove from the heat, drizzle with lime juice, sesame oil and sprinkle the herbs.
