We love this side anytime we have an Asian style dish. Quick and easy to make, sings in the mouth with heat, sweetness and sourness
1 cucumber, peeled
100g cherry tomatoes, quartered
1 banana shallot, very finely diced
1 red chilli, finely sliced
2 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp caster sugar
pinch of salt
handfull coriander leaves
Cut the cucumber into very thin slices. (You can use the slicer bit on the side of a box grater or mandolin.)
Add all the ingredients to a serving bowl. Give it all good stir making sure everything is coated. Leave to stand for 10 minutes before serving.
