A great dish for the family, delicious sticky chicken thighs great served with a salad and rice. I use thighs on the bone as they are more fun to eat with your fingers but you can use boneless thighs if you prefer and cook for 5 minutes less. This will feed 4 for a main course or 6 for a starter.
Don’t waste the skin removed from the thighs, make some wonderful crispy chicken skin.
100ml hoi sin sauce
1 tbsp sweet chilli sauce
4cm ginger, grated
4 cloves garlic, crushed
2 tbsp soy sauce
2 tbsp lemon juice
1 tsp Chinese five spice
12 bone in chicken thighs, skin removed
Mix the hoi sin, chilli sauce, ginger, garlic, soy sauce, lemon juice and five spice powder in a bowl large enough for to hold the chicken. Add the skinned chicken and using you hands, massage the marinade into all the pieces. Set aside to marinate for 30 minutes.
Preheat the oven to 200C fan. Line a baking tray with foil.
Spread the chicken out on the tray and bake for 35 minutes.
