I’ve always been interested in smoking food but I haven’t had the time or the money to invest in proper smoking equipment. I have settled for a smoke gun which is effective for smaller items. I started with smoking cooked beetroot and then I wanted to make smoked mash potato and realised if I smoked the butter it’s the perfect way to impart the flavour into the potatoes. If you don’t want to smoke your own butter, it can be bought on line.

If you buy a gun, just have fun with it and experiment. I hope this little video helps.

1.5 kg maris piper potatoes, peeled and chopped

220g smoked butter (see video clip)

salt to taste

white pepper to taste

Watch the video about how to smoke butter. Cook the potatoes in boiling salted water for 15-20 minutes until soft. Drain in a colander, cover with a tea towel and leave to steam dry for a few minutes.

Pass through a potato ricer back into the warm saucepan, cut the butter into cubes, add to the potatoes and beat until smooth. Taste and season with salt and white pepper.

  • 1.5 kg maris piper potatoes peeled and cubed
