I am writing this in the summer when the veg patch is overflowing with ingredients and I try to find new ways to use up food. I love cucumbers and this side dish is perfect for summer eating. You don’t have to have this as an accompaniment to asian dishes, it’s just as lovely with some roast chicken of a piece of fish.
1 large cucumber
1/2 tsp salt
1/2 tsp caster sugar
1 red chilli, finely sliced
2 tsp light soy sauce
1 tbsp sesame seeds
2 tsp black vinegar
1 tsp sesame oil
Start by smacking the cucumber. Trim the ends off the cucumber. Smack a few times with a rolling pin until it starts to split. Cut the smacked cucumber in half then into diagonal pieces. Put in a bow, sprinkle with salt and sugar and set aside for 15 minutes in the fridge.
Drain off excess water. Whisk the remaining ingredients together and toss the cucumber pieces so evenly coated. Store in the fridge in an airtight container for up to 5 days.
