Simple Chicken Satay And Asian Style Salmon

It’s good to have some recipes up your sleeve that are incredibly easy to make using shortcuts. In this case it’s the peanut butter. I have served these delicious satay chicken skewers at children’s parties, family picnics and even smart dinners as a starter or canapé and they never disappoint. This won’t win any prizes for authenticity but using just 3 ingredients. Serves 6 as a starter or 10-12 canapé.

300g chicken fillets cut into 2cm cubes

100g crunchy peanut butter

50ml dark soy sauce (this is an approx – you may need more)

Juice of a lime to drizzle at the end

Fresh coriander to garnish

You will need 8 wooden skewers

Put the peanut butter in a bowl and mix with the dark soy sauce a little at a time. It takes a while to incorporate so keep adding slowly. You should end up with a paste which is loose enough to coat the chicken. Pop the chicken into the peanut mixture and make sure it is coated all over, cover and leave to marinate for at least 30 minutes

When you’re ready to cook, soak the skewers in water for 20 mins. Pre heat the grill to high and place a rack in the grill tray. Skewer the chicken onto the sticks and place on the grill tray. Cook them for about 5-6 mins on each side but the length of time will vary depending on the size of your chunks

Remove from the oven, serve with rice, salad or on their own with a squeeze of lime and a sprinkling of coriander
