Classic Marinara Sauce

Make a batch of this and use in pasta dishes, on top of a pizza or freeze what you don’t use.

2 tbsp olive oil

2 medium onions finely diced

3 garlic cloves, minced

2 x 400 g tin tomatoes (I used Mutti San Marzano)

2 tsp tomato puree

1 tsp sugar

2 tsp dried oregano

1/2 tsp chilli flakes (optional)

Salt and pepper to taste

Warm a saucepan and then add the olive oil, let it it warm for a minute then add finely diced onion. Allow to sauté for 5 minutes before adding the garlic. minced garlic. Sweat on a low heat for up to 10 mins.

Stir in tomato purée followed by tins of tomatoes along with their juices, sugar, oregano, chilli flakes if using and salt and pepper Simmer over a low heat for 20 mins, breaking up the tomatoes as they cook.
