Ingredients
2tbspolive oil
1largeonionfinely diced
3clovesgarlic
2 x 400gtin tomatos (I used San Marzano)
2tsptomato purée
1tspsugar
2tspdried oregano
1/2tspchilli flakes (optional)
Instructions
Warm a saucepan and then add the olive oil, let it it warm for a minute then add finely diced onion. Allow to sauté for 5 minutes before adding the garlic. minced garlic. Sweat on a low heat for up to 10 mins.
Stir in tomato purée followed by tins of tomatoes along with their juices, sugar, oregano, chilli flakes if using and salt and pepper Simmer over a low heat for 15 mins, breaking up the tomatoes as they cook
