A great alternative to plain boiled rice.
Melt the butter and oil in a pan that has a lid. Sauté the onions over a low heat until soft. Turn the heat up t medium, add the rice and coat all over.
Pour in the coconut milk and stock. Add 1 tsp of salt along with the kaffir lime leaves, bring to a simmer, lower the heat to the lowest setting, put the lid and cook gently for 10-15 minutes stirring at least twice.
Remove from the heat and allow to sit with the lid on for 5 minutes. Remove the kaffir lime leaves and serve.

- 400 ml tin coconut milk
- 200 ml vegetable stock
- 1 tsp salt
