Cheese Straws

Everyone loves a crunchy cheese straw.

320 g sheet ready rolled puff pastry

1 egg, beaten

100 g cheddar cheese, grated

few pinches cayenne pepper

Preheat the oven to 200C fan.

Unroll the pastry and leave on the paper in which it’s wrapped. Brush all over with beaten egg then generously sprinkle with almost all the cheese, sprinkle with cayenne pepper (or paprika) and a little salt.

Slice the pastry into 12-14 slices. Twist each slice then brush with remaining egg, sprinkle with leftover cheese, bake in the oven for 20 minutes or until golden and crisp.

Lightly salt with sea salt and leave to cool.
