
In you can use regular potatoes, sweet potatoes or a mix of both which is what I did.
To save money on oven use, I usually bake some potatoes when I have other things in the oven, perhaps when I’m making a roast. They keep in the fridge for several days.
4 large potatoes (sweet or your favourite potato)
8 sausages
1 onion, finely diced
2 cloves garlic, finely diced
1 tsp ground cumin
chilli flakes to taste
2 tomatoes, diced
Preheat the oven to 200c fan.
Bake the potatoes for 40 minutes. When cool enough to handle, halve and carefully scrape out the flesh into a bowl. Line a baking tray with foil and place the potato skins on the tray.
Remove the skins from the sausages. Add a splash of vegetable oil to a frying pan and crumble in the sausages. Cook for 5-10 minutes until starting to brown. Add the onion and cook for 5 minutes until soft. Add the garlic and cook for 1 minutes then add cumin, chilli and tomatoes along with good few pinches to salt. Cook for a couple more minutes.
Mix the sausage mixture into the potato flesh, taste and adjust seasoning. Spoon the filling into the potato skins and bake for 20 minutes.
Sausage Stuffed Potatoes
