In you can use regular potatoes, sweet potatoes or a mix of both which is what I did. To save money on oven use, I usually bake some potatoes when I have other things in the oven, perhaps when I'm making a roast. They keep in the fridge for several days.

Ingredients
4largepotatoes (sweet or your favourite)
8sausages
1onionfinely diced
2clovesgarlicfinely diced
1tspground cumin
chilli flakes to taste
2tomatoesdiced
Instructions
Preheat the oven to 200c fan.
Bake the potatoes for 40 minutes. When cool enough to handle, halve and carefully scrape out the flesh into a bowl. Line a baking tray with foil and place the potato skins on the tray.
Remove the skins from the sausages. Add a splash of vegetable oil to a frying pan and crumble in the sausages. Cook for 5-10 minutes until starting to brown. Add the onion and cook for 5 minutes until soft. Add the garlic and cook for 1 minutes then add cumin, chilli and tomatoes along with good few pinches to salt. Cook for a couple more minutes.
Mix the sausage mixture into the potato flesh, taste and adjust seasoning. Spoon the filling into the potato skins and bake for 20 minutes. Sere with greens of your choice
