
We enjoy sharing food. Pot stickers are lovely to put on the table and share while you cook more. Make a dipping oil with some garlic cooked in oil or serve with soy sauce or ketjap manis.
For the vegetables you can use whatever you like. We like cabbage, broccoli, carrot and pepper. You will need a frying pan with a tight fitting lid.
Allow yourself plenty of time to make the dumplings, you can leave them covered with a damp tea towel until ready to cook. I use a dumpling maker as it does make life a little easier.
4 tbsp sesame oil
1 tbsp grated ginger
2 cloves garlic, grated
300g mixed vegetables, chopped small
2 tbsp soy sauce
2 spring onions, chopped
30 round gyoza or wonton wrappers
1 tbsp black sesame seeds
1 tbsp white sesame seeds

Heat 1 tbsp of sesame oil in the frying pan. When the oil starts to shimmer and the vegetables, ginger, garlic and chilli if using. Turn the heat down to medium and sauté for 5-10 minutes until the veg are soft. Add the soy sauce and spring onions and bubble until most of the liquid has evaporated. Tip into a bowl and leave to cool. Wipe the pan clean for later.
Have a bowl of water ready. If working by hand, Lay some wrappers out on a clean work surface. Put a tbsp of veg in the middle of each one. Use your finger or a pastry brush to dip in the water and dampen all the edges of the wrappers. Fold to create a half moon share and pinch together to seal. You can also use a gyoza press. Continue until they are all filled.
In a shallow bowl mix together the black and white sesame seeds. Take a pot sticker and flatten it along the bottom by pressing on the work surface. Brush the flattened bottom with water and dip in the sesame seeds then place on a tray.
You will need a frying pan with a lid. You will probably have to cook 2 batches depending on the size of your frying pan. Drizzle the base of the pan with sesame oil, when the oil shimmers, add some pot stickers seeds down and cook until the bottom becomes a light golden brown.
Pour in 60ml of water (be careful as the pan will spit) and immediately put on the lid and reduce the heat to medium. Cook for a further 3-4 minutes. Remove to a warm serving dish. Wipe the pan out and repeat.
