Sometimes all you want for dessert is some refreshing fruit. Here I have teamed savoury and sweet to make a tangy guilt free dessert
When using ginger in it’s raw form, I blanch it for 1 minute to temper the flavour slightly
1 medium pineapple, peeled and very thinly sliced
1 tsp ginger, finely chopped
1 Thai red chilli, seeds removed and finely sliced
2 tbsp caster sugar
1/2 lime, juiced and zested
3 sprigs mint, leaves torn
Put a little boiled water in a cup and add the ginger. Allow it to blanch for a minute, drain with a tea strainer and reserve.
Lay the pineapple slices out on a large serving platter or individual dinner plates.
Sprinkle with ginger, chilli and caster sugar. drizzle the lime juice and sprinkle the zest and mint leaves. Leave for 5 minutes before serving
- 800 g watermelon
- 1 tsp ginger finely chopped
