You can use shop bought onion marmalade or make your own using the recipe below.
I have included blackberries in the recipe for when they are in season, they are optional
Serve this tart as starter or a main with plenty of baby leaf salad on the side
375g pack ready rolled puff pastry
1 egg, beaten
320g jar onion marmalade (or homemade)
100g fresh blackberries (optional to add when in season)
1 tsp thyme leaves
150g goat’s cheese log, cut into 12 slices
Extra virgin olive oil for drizzling
Pre heat the oven to 200C fan
Carefully unroll the pastry sheet, keep it on the paper and place on a baking tray. Prick all over with a fork leaving a 2cm border around the edges. Brush the pastry with the beaten egg and bake for 10 minutes.
spread the onion marmalade over the pastry, sprinkle with salt and pepper and the blackberries if using. Place the slices of goat’s cheese, sprinkle with thyme leaves and drizzle with oil.
Return to the oven and bake for 10 minutes until the pastry is golden and the cheese has softened
