Ingredients
375gpack ready rolled puffed pastry
1eggbeaten
320gjar onion marmaladeor homemade
100gfresh blackberriesoptional
1tspthyme leaves
150glog of goat's cheesecut into 12 slices
extra virgin olive oilto drizzle
Instructions
Pre heat the oven to 200C fan
Carefully unroll the pastry sheet, keep it on the paper and place on a baking tray. Prick all over with a fork leaving a 2cm border around the edges. Brush the pastry with the beaten egg and bake for 10 minutes.
spread the onion marmalade over the pastry, sprinkle with salt and pepper and the blackberries if using. Place the slices of goat's cheese, sprinkle with thyme leaves and drizzle with oil.
Return to the oven and bake for 10 minutes until the pastry is golden and the cheese has softened
