Once you’ve made this once, you’ll be adding them to salads, meats and cheese sandwiches. I discovered it when making a Greek Salad, all the raw red onion really didn’t agree with me. This tempers the rawness and also makes the onions a wonderful wink colour.
1 red onion
1 lime, juiced
Finely slice the onion and place in a small bowl with the lime juice. Leave to marinate for at least an hour and up to 12. The longer you leave them, the more pink they become
