It’s funny the places recipes come from. I was watching The Bear on Disney + and they mentioned a mashed potato with herbs infused into the butter. I cooked it, I tasted it. It blew my mind, here is my recipe…
1 kg maris piper potatoes, peeled and roughly chopped
1 sprig rosemary
2 sprigs thyme
2 bay leaves
1 sprig sage
100 g butter
100 ml cream
Put the potatoes in a pan of salted water and bring to the boil. Cook for until they are soft enough to mash (approx 20 minutes)
Meanwhile, make a bouquet garni by tying all the herbs together with string. On a very low heat melt the butter, add the bouquet garni and cream. Simmer for a couple of minutes then turn the heat off and leave to infuse while the potatoes finish cooking.
Drain the potatoes into a colander, place a tea towel over them and leave for 5 minutes to dry out a little. Remove the tea towel, return to the saucepan and start to mash. Remove the bouquet garni from the butter/cream mixture and pour in a bit at a time to the mash. Season with salt and pepper (i like to use white pepper with mash potato) and it’s ready to serve.
