You can’t beat a great meatloaf. Eat it hot or cold or even in a sandwich. The photos show an alternative way to cook the meatloaf if you don’t have a loaf tin
1 large onion, grated
2 cloves garlic, minced
300 g pork mince
300 g beef mince
small pack parsley, finely chopped
2 tsp thyme or 1 tsp dry thyme
100 g fresh breadcrumbs
2 eggs, lightly beaten
50 g ketchup
1 tsp salt
tabasco (optional)
Glaze
50 g ketchup
2 tbsp brown sugar
1 tsp mustard
Preheat the oven to 200 c fan.
Mix all the ingredients for the glaze and set aside.
Put all the remaining ingredients in a bowl and mix thoroughly with your hands. Mould into a loaf shape and put in a loaf tin.
Paint the meat with the glaze and place in the oven for 55-60 minutes. Remove from the oven and leave to rest for at least 15 minutes before serving.
American Meatloaf

- 2 tbsp brown sugar
- 1 tsp mustard
Instructions
- Preheat the oven to 200 c fan.
- Mix all the ingredients for the glaze and set aside.
- Put all the remaining ingredients in a bowl and mix thoroughly with your hands.
- Mould into a loaf shape and put in a loaf tin and paint the meat with the glaze
- Place in the oven for 55-60 minutes.
- Remove from the oven and leave to rest for at least 15 minutes before serving.
