Useful little side salad to add some crunch and tartness.

1/2 cucumber

2 tsp white balsamic vinegar

1/4 tsp salt

grinding white pepper

10 mint leaves, chopped

small handful rocket leaves

Using a vegetable peeler, slice the cucumber vertically to make ribbons. Place in a bowl with the balsamic, salt and pepper. Toss lightly and leave to stand for 10 minutes.

Add mint and rocket and serve.
