
Easy side to accompany a BBQ. If you aren’t barbecuing, flash the cobs under a hot grill or scorch with a blow torch.
4 corn cobs
30 g butter, softened
1/2 tsp cumin
1/2 tsp garam masala
pinch of chilli flakes to taste (optional)
1 tbsp fresh coriander, finely chopped
Cook the corn in plenty of salted boiling water for 5-7 minutes. Drain and set aside ready to go on the BBQ.
In a small bowl using a fork, stir in the spices, chilli flakes and coriander, taste and add extra salt plus a grinding of black pepper.
When ready to eat, place the cobs on the BBQ and heat through allowing them to become charred and heated through. Remove to a serving dish, using a brush, coat each cob generously with the butter and serve.
