
When making a crumble for the family they don’t like a fancy crumble topping, they want something that reminds them of grandparents cooking. In this recipe I have added a little something extra to give the fruit a lovely creamy richness.
Preheat the oven to 180C fan.
Toss the apple and blackberries together in an oven proof baking dish. Mix ricotta with icing sugar and lemon zest and using a dessert spoon, dollop some ricotta over the fruit.
In a processor add the butter, sugar and flour and pulse a few times until the consistency of bread crumbs. Cover the fruit with the crumble topping and bake for 30 minutes. Remove from the oven and leave to cool for 15 minutes before serving.
Blackberry & Apple Creamy Crumble

- 3 eating apples peeled, cored and cut into chunks
- 400 g blackberries
- 60 g ricotta
- 2 tsp icing sugar
- 1/2 orange zested
- 120 g butter diced
- 120 g golden caster sugar
- 120 g flour
