I have kept this very simple with just sauté potatoes as an accompaniment. The quantity of sauce could serve 4 if you need but when a sauce tastes this good, I want a lot of it!

300 g maris piper potatoes

2 tbsp vegetable oil

2 x tuna steak (approx 120g each)

olive oil

1 tsp peppercorns, coarse crushed

1 tsp sea salt

150 ml good quality chicken stock

2 tsp lemon juice

small bunch parsley, leaves picked

60 g butter, cut into cubes & kept chilled

Bring a pan of salted water to the boil. Cook the potato cubes for 3 minutes, drain and set aside to cool for a few minutes.

While the potatoes are cooling, get everything ready for the tuna cook. Paint the tuna steaks with olive oil and sprinkle with the pepper and salt.

Heat the vegetable oil in a frying pan over a medium heat, fry the potato cubes browning on all sides. This will take 7-10 minutes. Remove to a plate covered with kitchen paper and season with salt. Set aside to keep warm

Heat a frying pan over a medium heat, add the tuna steaks and dry cook for 2-3 minutes on each side (depending on the thickness). remove the steaks and keep warm. Turn the heat high, add stock and lemon juice, stir to reduce to a syrup, remove from the heat and swirl in parsley and cold butter.

Place the potatoes and tuna on warmed plates, cover the tuna with sauce and serve.

  • Mix crushed pepper and salt together. Rub the tuna steaks with a little vegetable oil and sprinkle with salt and pepper.

Turn the heat high, add stock and lemon juice, stir to reduce to a syrup, remove from the heat and swirl in parsley and cold butter.
