Pork fillet is healthy piece of meat, no fat, very tender and doesn’t need to cook for too long. In addition to that, with this recipe, one fillet will feed 4 people. Use whatever veg you like for the accompaniment. I hate giving measurements for the veg so these are just a guide.
300 g baby potatoes
1 pork fillet, trimmed and cut into 4
3 tbsp plain flour
1 egg, beatem
100 g panko breadcrumbs
50 g butter
200 g of green veg (I used broccoli, peas & some shredded cabbage)
1 lemon quartered
Boil the baby potatoes in salted water for 15 minutes. Drain, cut into quarters and set aside.
Place a piece of baking paper on the work surface, put one slice of pork on top, cover with another piece of paper and used something heavy to bash the pork out to approximately ½ cm thick, being careful not to tear the meat. Repeat this on all slices.
Mix some salt into the flour on a plate, put the beaten egg in another bowl and finally the panko in a third. Dip each flattened slice of meat in the flour, covering it on both sides then dip in the egg and lastly the panko.
Place a large frying pan over a medium heat, add a splash of vegetable and a ¼ of the butter. Once the butter is foaming add the schnitzels and fry for 3 minutes on each side until golden and cooked through. remove to a warm serving dish while you finish the veg.
Turn the heat up under the frying pan, add the rest of the butter, once melted, add the quartereed cooked potatoes and cook for a few minutes over a high heat to drown them on all sides. Add the rest of the vegetables, stir to coat in the butter and cook for a few more minutes depending on what vegetables you have chosen. Serve the the quartered lemon.
Pork Schnitzle with Sauté Vegetables
Ingredients

- 3 tbsp plain flour
- 1 egg beaten
- 100 g panko breadcrumbs

- 200 g green veg (I used broccoli, peas and cabbage)
- 1 lemon quartered

- Prepare your vegetable mix - use any green vegetables you have around. I use frozen peas, broccoli, thinly sliced cabbage and a few chopped spring onions
