Very easy canapé and a great one to make up to 8 hours ahead

Tapenade is available in most supermarkets and will be found in the olive section or you can make your own

Makes 16 canapés

16 slices of cucumber

5 medium sized tomatoes – sliced to make 16

200g feta, cut into 16 pieces

4 tbsp Tapenade (olive paste bought in supermarkets or make your own)

4 mint leaves, chopped

As in the photo, start with a slice of cucumber, top with feta, tomato, tapenade,  and a sprig of mint.
