Cloud potato cakes

These are similar to potato croquettes but without the bread crumbs. Light, fluffy and easy to make

800g maris piper potatoes, scrubbed clean

1 tbsp salt

150g butter, cubed

1 egg, lightly beaten

3 tbsp parmesan (or vegetarian hard cheese) finely grated

Cloud potato cakes ready to bakePut the potatoes in a large pan, cover with cold water, add the salt and bring to the boil. Simmer until tender when you prick them. Drain, leave to cool a little then remove the skins.

Pre heat the oven to 200C fan.

Mash the potatoes in a bowl. Add two thirds of the butter along with the beaten egg, cheese and a good grind of pepper, mix well, taste and adjust the seasoning.

Melt the remaining butter. Form the potato into egg size shapes, place on a baking sheet lined with baking paper. Using a pastry brush, paint the potatoes all over with the melted butter, place in the oven and bake for 20 minutes until golden.
