Most of my recipes don’t require any specialist equipment but I have to include this amazing microwave sponge. It’s impressive included in a dessert as seen in the photo
You will need a 0.25L espuma gun (whip cream maker) and two NC02 gas cartridges and a paper cup with a few holes poked in the bottom.

Mix all the ingredients together with a stick blender and pass through a sieve. Pour into the espuma bottle, charge with two gas canisters then shake the bottle vigorously.
Make a few holes in the bottom of a paper cup. Siphon the cake batter to a third of the way up the cup and microwave on full power for 40 seconds, allow to cool slightly then remove the sponge. Continue making one at a time until all the batter is used. These will keep in an airtight container for a couple of hours.
