Kezuri-bushi

Definition:

Also known as bonito flakes. The bonito fish is a relative of the mackerel and tuna. The filleted fish is dried rock hard and shaved into pale pink, strongly aromatic flakes and used to make dashi and as a garnish. The larger flakes provide more flavour. Available from Asian food stores.
