Bollito misto

Definition:

Italian for a mixture of boiled things, bollito misto sees a range of meats simmered together and served with a variety of condiments. Typically, key ingredients include a boiling cut of beef, chicken, ham, veal tongue (or indeed a calf’s head), with salsa verde, grated horseradish and mustard fruits among the sauces offered.
