Birdseye chilli

The most used fresh chilli in Thai cuisine, sometimes called bird peppers, these tiny, fiery chillies are red, green, lime or orange, depending on the variety. Dried Birdseye should not be used in place of the fresh ones; if necessary, substitute another fresh chilli.
