Batch-Made Cosmopolitan

When I’m not trying a new cocktail, my go-to is a Cosmopolitan, and I keep a 750ml bottle of it ready-mixed in the fridge.

I fancied a piña colada but didn’t have Malibu or any of the fancy bits, so I cobbled this together.

Another one made up for my friend Bruce, who challenged me to come up with melon cocktails.

I bought limoncello for my grape and limoncello tart, so I’m doing a few limoncello cocktails.

Apparently the same as a Dark & Stormy.

I had lychee juice that needed using up, and this is what happened.

Made with Licor 43, a Spanish vanilla liqueur with 43 ingredients – so smooth I’d happily drink it chilled on its own.

Invented for my friend Bruce, using honeydew melon and limoncello.

A bonus pair for National Martini Day: my elderflower martini, which I adore, and a 50/50, which is one for the vermouth lovers.
