Ingredients
750gbaby, new or Charlotte potatoes
8spring onionscut into 2 cm slices
1tbspvegetable oil
80gbutter
Instructions
Bring a large pan of salted water to the boil. Tip in the potatoes and cook for 10 minutes, drain. Once cool enough to handle, slice.
In a large frying pan, melt the butter with the oil, once hot, add the sliced potatoes, a generous pinch of salt and fry until golden all over. Add the spring onions and continue to fry for a couple of minutes until the onions have softened slightly. Add a grinding of black pepper and serve.
