I'm not giving quantities for this because you will just cook what you have available. Watch the video if you want to make super flat pieces of skin
Preheat the oven to 200c fan. Spread the chicken skins out on a baking tray lined with baking paper, sprinkle with a little salt place in the oven for 10-15 minutes or until crisp.
Remove and place the skins on kitchen paper. Use any excess fat that has collected in the baking tray to flavour other dishes.
